Step 1

Dredge each chicken thigh in flour until lightly coated.

1. Dredge each chicken thigh in flour until lightly coated.
2. Dip the floured chicken into beaten egg.
3. Coat the chicken thoroughly in panko breadcrumbs, pressing the panko down so it sticks well.
4. Repeat with the remaining chicken.
5. Heat about 1 inch of cooking oil over medium heat.
6. Test the oil by dropping in a small piece of panko. If it bubbles consistently, the oil is ready.
7. Add the breaded chicken and fry for about 5 minutes per side, or until golden brown and cooked through.
8. Remove the chicken from the oil and let it cool slightly.
9. Make the tonkatsu sauce by mixing the ketchup, soy sauce, mirin or white wine, brown sugar, Worcestershire sauce, ginger powder, and crushed garlic.
10. Slice the chicken lengthwise into even pieces.
11. Serve the chicken katsu over hot rice with the tonkatsu sauce on the side.

Description

This Hawaiian-style chicken katsu uses chicken thighs coated in flour, egg, and panko, then fried until the crust is deeply golden and crisp. The contrast between the crunchy breading and juicy chicken is the centerpiece of the dish. A homemade tonkatsu-style sauce brings together ketchup, soy sauce, mirin, brown sugar, Worcestershire sauce, ginger, and garlic for a tangy, savory-sweet finish. Slice the chicken into strips and serve it over hot rice with the sauce alongside. It is a straightforward way to bring a plate-lunch favorite into your own kitchen.
