1. Divide beef into four 6 oz portions and gently form patties without overworking the meat.
2. Refrigerate patties, covered, for at least 20 minutes.
3. Heat grill to high. Season both sides generously with kosher salt and black pepper.
4. Grill patties without pressing them down. Cook about 5 minutes on the first side, until they release easily and have developed a good char.
5. Flip onto a lower-heat section of the grill and continue cooking to your preferred doneness.
6. Add American cheese, lower the grill heat, close the lid, and melt for about 30 seconds.
7. Remove burgers and rest 1–2 minutes.
8. Mix ketchup, mayonnaise, mustard, chopped shallot, and relish to make the burger sauce.
9. Spread sauce on the potato roll, add the burger, then top with more sauce, seasoned tomato, red onion, and lettuce.

Description

This classic grilled cheeseburger focuses on technique rather than complicated ingredients. Six-ounce patties made from 80/20 ground beef provide enough fat for a juicy interior without causing excessive flare-ups. High heat develops a flavorful crust, while finishing over lower heat gives you better control over doneness. Melted American cheese, a soft potato roll, fresh toppings, and a simple ketchup-mustard-mayo burger sauce complete the burger.
