Description

This backyard beer can chicken gets coated in mayonnaise and a generous layer of barbecue and poultry seasonings before cooking upright over indirect grill heat. The method encourages even exposure to the grill while the skin takes on color and the meat cooks through. A glaze of barbecue sauce, red wine vinegar, beer, and additional seasoning is brushed on toward the end so it can set without burning. Let the chicken rest briefly before carefully removing it from the holder and carving. The result is a smoky, seasoned whole chicken with a tangy, slightly sweet barbecue finish.
