Mexican-Food Classics
A collection of classic Mexican dishes shaped by Indigenous traditions, Spanish influence, regional cooking, and generations of adaptation.
Mexican food grew from Indigenous ingredients and techniques such as corn, beans, chiles, squash, tomatoes, cacao, and nixtamalization; then Spanish-introduced ingredients such as pork, beef, dairy, wheat, rice, and new cooking traditions; then centuries of regional Mexican development. Later, migration and border culture produced Mexican-American traditions like Tex-Mex, while restaurant menus abroad narrowed a huge cuisine into a smaller familiar set of tacos, enchiladas, rice, beans, burritos, and similar dishes.
